My Thoughts:

Episode 4 sees the bartender of dreams impressing a very very very impressive chef from France.  All eyes and mouths are tuned into his abilities to craft and he knows it.

But in classic Ryu fashion he hits the heart strings of all of his customers.  A nice surprise of episode 4 is getting to go back to the dive bar where Ryu got his start.
